Whole 30: Week 2 – COMPLETED!

My brother actually said that he wants to continue the Paleo when we finish the Whole30 on March 4th. Good for him! I need some cheese and milk in my life!

This week was much better than the first as I was better prepared, although I still didn’t bother with a meal plan. My meals were generally as follows:

Breakfast

  • Sardine lettuce wraps
  • Minced beef
  • Fruit

Snacks

  • Grapefuits
  • Apples
  • Portugals
  • Pistachios! Lots of pistachios

Lunch/Dinner

  • Green Salad with roast chicken and balsamic vinaigrette
  • Green Salad with rotisserie chicken and lemon vinaigrette
  • Coconut crusted baked chicken with sauteed spinach and mushrooms
  • Mince beef-stuffed bell peppers
  • Cassava fries, fried plantains, salad and grilled chicken

Monday’s lunch: Lettuce, spinach and arugula salad with balsamic vinaigrette and roast chicken.

Since Friday was Valentine’s Day, we feasted a bit on appetizers. We had:

– Geera chicken gizzards

– Wings, baked and tossed in my paleo mayo and hot sauce. Yum!

– Celery sticks and dip

And for dessert we had strawberries dipped in whipped coconut cream.

Will try to be better about it next week.

Homemade Mayo Take II

After looking high and low for Extra Light Tasting Olive Oil because EVOO is not the best option for mayo because of its strong taste, and not willing to spend upwards of TTD 130 on a 6oz bottle of avocado oil, I decided to check PriceSmart and ended up with a 2L bottle of extra light tasting olive oil.

Wayyyyy more than I needed but I bought it anyway – after looking virtually everywhere, I wasn’t letting my jackpot go just because it contained enough to service KFC for a day.

Armed with my oil, I excitedly went home to prep my mayo. The outcome was superb! I immediately made coconut crusted baked chicken. It was delish! I took photos of each stage of the mayo prep so I would definitely post those soon.

Switching up my workout routine

I HATE waking up early… I’d do anything for a few extra minutes on a morning. That said, I decided to make the effort to work out on a morning instead of the evening… and let me tell ya, it’s been great. I’m in pain but energised every morning. Best of all, I’m happy to not have to work out in the evening… extra time to cook because for some reason, I had to cook every day last week!

Looking forward

On to Week 3! Last night I baked a whole red snapper, made a green salad with balsamic vinaigrette and made something of a cross between tomato chokha and roasted tomato salsa. It was delicious! And it’s done… so I’m off to prepare lunch for tomorrow. I’m feeling cole slaw with spicy shrimp or sauteed swiss chard with mushrooms and more red snapper…
